Nutrition Corner: Celebrate with Orange Foods! October is the perfect time to add vibrant, nutrient-packed orange foods to your child’s meals. These seasonal favorites aren’t just fun and festive; they’re loaded with vitamins and minerals essential for growing bodies.
• Pumpkins: Rich in fiber and vitamin A, pumpkin is great for vision and immune health. Try roasted pumpkin slices or blend it into soups.
• Carrots: Full of beta-carotene, carrots help with eye health and can be easily added to lunchboxes as crunchy sticks or blended into smoothies.
• Sweet Potatoes: These are powerhouses of potassium, vitamin C, and fiber. Bake them, mash them, or make sweet potato fries for a kid-friendly side dish.
• Butternut Squash: This versatile vegetable can be roasted, pureed into sauces, or added to stews for a boost of vitamins A and C.
These orange wonders can be an easy, fun way to brighten up meals while giving your kids the nutrients they need to thrive this fall. Fall
Garden Tips: Planting in Arkansas Fall is a great time to get your garden ready for the cooler months in Arkansas. If you’re thinking about planting, consider crops that thrive in the autumn chill. Some great options include:
• Leafy Greens: Spinach, kale, and lettuce are perfect for fall planting and will continue producing through the cooler months.
• Root Vegetables: Beets, radishes, and turnips can be planted now and harvested before the first hard frost.
• Herbs: Parsley, cilantro, and chives are hardy enough for fall weather and can be used fresh in many of your favorite recipes. Preparing your garden now will give you a great harvest later in the season.
