Snow Day Recipes: Fun & Nutritious

When school is canceled, and the snow is piling up, it’s a great time to make cooking a family activity! Here are a couple of easy and healthy recipes to try:

Snowy Morning Oatmeal Bar

Ingredients:

• 2 cups rolled oats

• 2 cups milk (or plant-based alternative)

• 1 tsp cinnamon

• 1/4 cup honey or maple syrup

• Toppings: chopped nuts, fresh or dried fruits, shredded coconut, dark chocolate chips

Directions:

1. Cook oats with milk on medium heat until creamy.

2. Stir in cinnamon and sweetener.

3. Set up a topping station and let everyone create their own bowl!

Nutrition Tip: Oats are high in fiber and will keep you warm and full while providing long-lasting energy for snowball fights and sledding.

DIY Hot Cocoa Mix

Ingredients:

• 2 cups unsweetened cocoa powder

• 1 cup powdered milk

• 1/4 cup coconut sugar (or sweetener of choice)

• 1 tsp vanilla powder (optional)

Directions:

1. Mix all ingredients and store in an airtight jar.

2. To serve, add 2 tbsp mix to a mug of warm milk or water.

3. Top with whipped cream, mini marshmallows, or a sprinkle of cinnamon.

Nutrition Tip: Using unsweetened cocoa provides antioxidants while letting you control the sweetness.

Cozy Meals to Warm Up

When it’s cold outside, hearty, nutrient-rich meals can make everyone feel cozy and cared for.

Winter Veggie Soup

Ingredients:

• 1 tbsp olive oil

• 1 onion, chopped

• 2 garlic cloves, minced

• 2 carrots, sliced

• 2 celery stalks, chopped

• 4 cups vegetable broth

• 1 can diced tomatoes

• 1 cup kale or spinach

• 1 cup cooked quinoa or lentils

• Spices: thyme, bay leaf, salt, and pepper

Directions:

1. Sauté onion, garlic, carrots, and celery in olive oil until soft.

2. Add broth, tomatoes, and spices. Simmer for 20 minutes.

3. Stir in greens and cooked quinoa or lentils. Cook for another 5 minutes.

Nutrition Tip: Packed with vitamins and fiber, this soup will boost your immune system during cold and flu season.

Sweet Potato Chili

Ingredients:

• 1 tbsp olive oil

• 1 onion, diced

• 1 bell pepper, diced

• 2 sweet potatoes, peeled and cubed

• 1 can black beans, drained

• 1 can kidney beans, drained

• 1 can diced tomatoes

• 1 tbsp chili powder

• 1 tsp cumin

• 1 tsp smoked paprika

• Optional: shredded cheese, avocado, or Greek yogurt for topping

Directions:

1. Heat oil and sauté onion, bell pepper, and sweet potatoes for 5 minutes.

2. Add beans, tomatoes, and spices. Simmer for 30 minutes until sweet potatoes are tender.

3. Serve with your favorite toppings.

Nutrition Tip: Sweet potatoes are high in beta-carotene, while beans provide plant-based protein and fiber for a balanced, warming meal.

Cooking Corner: Snow Day Fun!

• Creative Snowflake Snacks: Use cookie cutters to cut whole-grain tortillas into snowflake shapes. Brush with olive oil, sprinkle with cinnamon and sugar, and bake until crispy.

• Winter Smoothies: Blend frozen berries, a banana, spinach, and milk for a nutrient-packed “snowstorm smoothie.”
