Lucky Brussels Sprouts
OK, this is a St. Patrick's Day recipe you have got to try. It uses my pesto recipe (always tasty and nice to have on hand) and Brussels Sprouts. To learn more about the history of these funny little mini-cabbage-looking vegetables I turned to the Real Food Encyclopedia. The blog says, "Brussels sprouts are thought to have originated in Rome, but they really hit their stride in Belgium where they became popular as a vegetable crop in the 16th century. It was there that Brussels sprouts were tagged with the name they still carry today. French settlers brought Brussels sprouts to Louisiana around 1800 and commercial production began there in 1925." Pretty cool, huh? You're literally eating history in every bit. Give this recipe a try and let me know what you think. Don't forget that we have summer camps coming up at both Pulaski Academy and The Anthony School here in Little Rock.
